German Apple Cake {gluten-free}

Hey y’all! This cake is seriously good. The apples are delightful and you could eat it for breakfast and dessert. Yum yum! This recipe is incredibly simple and quick, and it uses ingredients that are already in your pantry. Happy cooking!

Preheat the oven to 350 degrees F. Butter a spring form pan. Peel two apples of your choice of type.

Cut each apple into six pieces.

Mix the flours, xantham gum, baking powder, and salt together in a small bowl. Cream the butter, sugar, and lemon zest together in a stand mixer until light and fluffy. Add eggs one at a time, scraping the sides of the bowl often. Then add the vanilla. Add the flour mixture and mix on low until just incorporated. Pour the batter into the pan.

Score each apple with the tines of a fork. Place the pieces around the perimeter of the cake with one in the center. Sprinkle turbinado sugar on top.

Bake the cake for 30-40 minutes; until a toothpick inserted in the center comes out clean. Don’t worry if the cake around the apples look underdone, it’s just the moisture from the apples.
